Whisky Sour
History
The original sour formula of spirit, citrus, and sugar borrows a lot from the Daiquiri-like mixture know as Grog used by sailors to combat scurvy at sea. The later addition of egg white in 1922, lending the cocktail its signature silky texture, is credited to Anglo-Belgian bartender Robert Vermeire, who famously noted that “a few drops of white of egg improve all sours.” This version here substitutes aquafaba for egg white, preserving the smooth, creamy mouthfeel while remaining entirely vegan.

Espresso Martini
History
The cocktail we know today as the Espresso Martini began life as the more literal Vodka Espresso, originally served on the rocks. Created around 1983 by Dick Bradsell at the Soho Brasserie in London, it was famously mixed for a guest—often described as a model—who asked for something to “wake me up, then mess me up.” This version builds on that late-night classic by adding aquafaba for a smoother texture and swapping simple syrup for vanilla syrup, adding subtle sweet aroma to the drink’s rich coffee character.

Pornstar Martini
History
The Pornstar Martini was adapted from a recipe created in 2002 by Douglas Ankrah at The Townhouse bar in Knightsbridge, London, and later became closely associated with his influential LAB bar. Originally named the Maverick Martini after a nightclub in Cape Town that Ankrah frequented, the drink evolved into a bold modern classic, being a passion fruit and vanilla crowd-pleaser that's balanced with zesty lime, often served with sparkling wine on the side.
